Microgreens are young edible plants that are harvested shortly after the cotyledon leaves have developed. Microgreens are rich in nutrients and come in a variety of different colors, textures and shapes. Cotyledon leaves are part of the seeds embryo and provide the nutrients to the plant until the true leaves take over and photosynthesis commences.
Microgreens are anywhere from 1-3 inches in size and the entire plant is edible. They can be eaten raw and added to fresh meals or added to cooked dishes (stir fry's or pastas) towards the end of the cooking process. They can be frozen and added to smoothies to turn a fruit smoothie into a superfood smoothie.
Microgreens have an aromatic flavor with varying tastes, depending on the variety. Some are spicy with robust flavor and others are mild with a soft subtle flavor. They are delicate greens that require refrigeration until consumed.
